Beat the sugar and softened butter for 4 minutes. Add the mint extract and cream and beat for 1 minute.<br />

If you like, add a few drops of green food colouring to tint the icing. I added a wee bit more whipping cream to make the icing more spreadable. If mint is not your thing, you could easily substitute maple or orange extract to suit your taste buds.<br />

According to the above article, in Jan 2011 you will find Fruity Pebbles and Cocoa Pebbles with gluten free labelling. I know my daughter will be excited to eat something other than Rice Chex. We eat cereal every morning to keep it simple, and occasionlly yoplait yogurt, which is also labelled gluten free. I will be looking out for a box of each. It is nice to see another company offering GF cereal.<br />

It has a mixture of tapioca starch flour, potato starch flour & millet flour. Never heard of them?! Neither had I until Rob was put on a gluten free diet.<br />

Gluten (which comes from wheat, barley and rye) is in a lot of things you commonly use around the house ex. crackers, breads, cookies, cakes, soup packages, bisto gravy thickener, spices and a whole lot more.<br />

I am cooking in a whole new way these days and it is rather difficult. I have some tried and true recipes that I usually cook, but I rarely experiment with new recipes, until lately so my husband doesn't get 'glutened' as they say.<br />

He has to read all labels carefully, and most of the time this means saying no to foods he loves!<br />

note: this was a complete flop. my gas oven is not accurate, and always overheats. They are also scrumptious. I have been baking them everyother day literally. They only take a minute to whip up and taste crispy and chewy at the same time. oh so good!<br />

1 cup peanut butter<br />
1 cup brown sugar<br />
1 egg<br />
1 tsp. baking soda<br />
1 tsp. vanilla extract<br />
preheat oven to 350. mix all ingredients. drop onto greased cookie sheet and flatten with a fork (to get the crispy/chewy affect) bake for 8-10 minutes. makes 1.5 dozen<br />

p.s. I always add 1 cup of chocolate chips<br />
